Anyone have a good and easy one they would share? Got four smoked hocks in the freezer and have never made bean soup before.

Quick and easy one here, and is very tasty.

1# beans sorted. I mostly use pintos, but any bean works. Soak overnight and change water at least once
1 large onion - diced
1# good thick bacon (I cut the bacon in 1" peices) - your smoked hocks will be even better
2 cans rotel tomatoes with green chilies (Can use the hot rotel if you want it a bit more spicy)
Lots of garlic powder and salt/pepper to taste. I also like to dash it with whatever a favorite jalapeno season is for you.

Soak beans overnight. Combine beans and all other ingredients in large crockpot and put on high. As soon as pot begins to bubble, reduce heat to low and cook some more. About 5 hours and done with my crockpot. Very cheap, quick, and yet very good. Chancey

Mama's recipe

1lb dry black beans picked sorted and soaked in just enough water to cover. Put on to soak well ahead of time.
2 large smoked hocks
1 large onion diced
1 large bell pepper seeded and diced (can substitute equivalent poblano, hatch, etc)
6-8 cloves garlic minced
2-3 bay leaves
Salt/Pepper to taste
Dash cayenne (optional)
1 bunch cilantro chopped (optional)
1 mild or sweet onion diced (for serving)
Sour Cream (for serving)
Cooked parboiled rice for serving

Saute onion and pepper in olive oil. Add bulk of cilantro is using reserving some for serving. Add garlic when onion is tender. When aromatic add bay leaves, hocks and beans with soaking water. Top up water to just cover. Bring to a boil then lower heat and cook until beans are tender and meat is ready to fall off the bone. Season with salt, pepper, cayenne. Remove hocks, bone out and chop meat. Return to pot.

Serve over rice, garnish with diced sweet onion, cilantro and a dollop of sourcream.

I do it pretty simple. One or two bags of beans in the crockpot, on all day, with enough water to cover, along with a chunk of whatever meat sounds good.

That's how we do it too. We use smoked shanks or ham bones for the meat and navy or pinto beans.

Re: Home Made Bean Soup Recipe? - 09/11/21 08:49 PM

1lb red beans
1 large onion diced
1 large bell pepper seeded and diced
3 stalks celery diced
6-8 cloves garlic minced
3 bay leaves
2 smoked hocks
1lb spicy smoked sausage or anduille (I prefer conecuh brand hickory smoked)
1T cajun seasoning (I prefer Tony Cachere)
1t Tabasco or to taste
Salt/Pepper to taste
Cooked parboiled rice for serving

Pick, sort and soak beans 4-6 hours.
Split sausage and slice into quarter inch slices. Brown sausage and set aside. Pour off excess fat then saute the trinity (onion/peppers/celery) until tender add garlic and bay leaves until aromatic. Add hocks, drained and rinsed beans and six cups water. Add seasoning and Tabasco. Bring to a boil then simmer for an hour. Add sausage and continue for another hour to hour and a half until beans are soft. Optional, mash some of the beans for thicker broth. Remove hocks, bone out and chop meat. Return to pot. Adjust salt and pepper to taste.
Serve over rice.

If you can find tasso ham substitute it for the hocks. May need to adjust the seasoning.

soak beans over night then drain . can use more than one type of bean. pinto and navy are good together. a few black beans are good in there too. put meat beans chopped onion salt pepper and water in crock pot or on a stove top. low heat. barely a simmer. let them cook all day. add water if needed. after beans are nice and cooked take out a cup or so and run them in a food processor to puree into paste. add that back into the pot to thicken.

My Granny left the wooded stirring spoon in the bean pot. Stirred often while simmering, and all the toots would climb up the spoon and jump out! Obviously many many didn't make the climb!

X3 but we prefer Great Northern beans. An onion and a little ham soup base only makes it better.

Oh and as some of the others have said, you must have a good cornbread on the side.... AND remember playing covered wagon is only fun for you, your wife will not see the humor in it!

Fried tators too. Slice em up in a skillet with bacon grease. i like some onion in them also. Salt and pepper. Low heat and a lid. When they are about done add about 1/4 cup of water and some green chili if you have any to the skillet and put the lid back on. After about 15 minutes they are ready to eat and nothing will be stuck on your black skillet. I like ketchup on fried taters.

A glass of cold buttermilk with that good looking corn bread is good to me.

Cant get buttermilk here. I dont know anybody selling raw milk. All the dairies have gone corporate. All we can get is whatever that stuff is at grocery stores.

Ow.

The baking soda helps to soften the beans. If the beans are old they sometimes will not soften.
