We always just used them to tie egg sacs to catch more trout.

Use 'em for bait, feed them to a pet, or eat them yourself. rolled in cornmeal and fried, or just boiled, or if you like raw fish call them sushi and eat 'em raw.

Soak them in half pint jars with Pautzke nectar and have a bunch of individual eggs for trout or panfish. They’ll rehydrate and soften up some. They look to dry for any type of powder cure and the membrane is gone. Or turn them into crawfish or chicken feed.

They make good preparator bait salted or let them get ripe in a jar.

Here in Michigan I would tie spawnbags to catch more trout….or separate them and cure them and catch whitefish.
I would think your whitefish options could be somewhat limited near the desert though.
