Things are getting crazy before processing was about the same as the price of the hog now it $100 more for the basic cut and wrap with hams, sausage and bacon smoked. I bought 2 packs of black label bacon last month $9 a packageover a pound I thought that was kind of high LOL

Processing was $100+ over the price of the hog it was a lot closer in the past she will check if that’s right when she picks it up.

What Gary Benson said. Can cut the loin into chops. Can cook as pork roast. Can cook pork butt (shoulder) for pulled pork, cut steaks off the boneless part, cure the bonless part and cut down for bacon, bone out the shoulder blade and grind for sausage.

Just ordered a pig from a local farmer and filled out a cut sheet. He says $600 to $625 Butchered and vac sealed. He even delivers it to you. I have not bought a pig before and have no idea what an average weight finished would be.

Around here the run on it is due to everyone making their own venison sausage. I would think in a few weeks here the price should go down.

Gary, that is live weight?

Charles2 there are some variables but you’d be lucky to get 50 percent of live weight back in packages, and that would include bone, but if I understand correct that price includes processing and possible delivery so that’s not a horrible price.

That's about two bucks a lb which ain't a bad deal if it's good pork.

Yes, that price includes everything. So, 150lbs or in that ballpark. I understand that is no guarantee. Just was wondering so I have enough freezer space. Might have to gift some to my family, but I am good with that too.

Seems a little high to me, but I haven't bought a pig for a while. If it weighs 300lbs (that's a big one), you will likely end up with maybe 150lbs of meat. That's around $4.00 per pound.

Lard was an option, so I asked for some. I want to try Lazarus Bacon bait recipe.

Re: Bacon $15 Pound-Can’t Find Pork Belly - 11/15/21 03:35 AM

Typically a 270-280 lbs. fed out hog will hang at about 70% and some will get you about 55% of meat. Take all the lard they will give you. I use it to cook and bake with instead of butter in things like waffles etc. No added sodium etc. in lard.
We are fortunate in our area, as we have very few hog operations but there are several meat markets and stores that have some really good pork specials quite often. Lean pork on the board is down to the mid $70s so pork is not tracking beef to closely. I don't look for bacon when it is high. I buy bulk ground pork and then season it at home for sausages etc. and eat that instead.

$195 for 250lb pig live weight and $340 to process it at the new place it went to the old place was a $100 less but the seller was going to the new place or we had to wait I felt this was no time to dally the way things are going.
