How do you fix the turkey? - 11/25/21 02:06 PM

I'm a big fan of oven bags. Brined it overnight in a 5 gal bucket of Tenderquick solution, rinsed it, and put it in an oven bag. It'll be ready in 3 hours. About 15 pounds.
Oh, and stuffed it too with a box of StoveTop.

Butterball in a bag wild is cut up into chislic to hold the little bit of moisture in the meat, thumb size pieces seared in hot oil until brown on the outside.

Twenty pounder in a bag. Stuffing is four loaves of bread, celery and onions from garden, butter, salt and pepper.

Did a turkey breast in the instant pot today. Took about 40 minutes. Nice and juicy. Homemade stuffing in the oven, sweet potatoes, russets and sweet corn on the side along with fresh baked dinner rolls. A lot of work for just the two of us, but worth it!

Place a order with my local butcher for a 20# smoked bird. Been doing it for 30 years. [Linked Image]
Not plated yet, it rides home in a cooler.

My son injected, smoked and then Fried the bird, it was juicy, tender and Delicious.

soaked overnight in apple cider and rum with some spices then smoked slow and basted with butter and spices.
