Love it, Hate it, should try it

Love it, Hate it, should try it - 02/06/22 11:10 PM

The manly Liver and Onion dinner. I had just a small helping of liver last week. It had been a long time since I made a good full course meal. Today was the day.

My neighbor stopped by yesterday and said he used to eat liver a couple times a year when he was a young fella some 60 years ago.So I cooked up a few pounds for both of us. My wife doesn't like it nor does my neighbors wife so we ate good today.

[Linked Image]

Prepping the liver by soaking in whole milk and cream for several hours in the fridge.

[Linked Image]

Seasoned quartered potatoes ready for baking in the oven.

[Linked Image]

Baked seasoned potatoes ready to eat.

[Linked Image]

Carmeled / brown sugar carrots ready for the oven.

[Linked Image]

Carrots hot and ready for serving

[Linked Image]

Slow cooking 4 sliced onions to saute the liver.

[Linked Image]

Large platters of tender fried / breaded baby beef liver slices.

[Linked Image]

A large plateful of all the fixings. I had to stack some things on top of each other to make it all fit. smile

I also did a pot of peas and diced onions and mashed potatoes but didn't get a photo of them. Delicious also.

Thankfully I have enough for another meal in a day or so. I am maxed out on my Iron requirements I believe.

I found some calf liver the other day. I really like it. Usually have to settle for beef liver. Just not much veal sold any more and makes calf liver hard to find. I just put flour salt and pepper in a baggie. Put a piece of liver in and shake it up. I cook the liver on top a bed of half cooked fried onions. Then it all gets done at the same time. Over cooked liver is tough and not good.

My favorite liver is fresh deer or moose liver.

Yuck. Taters onions carrots look good but the liver is coyote lure and bait only! Ive often wondered why you would eat liver, heart, tongue or what ever when there are great cuts of steak. No liver for me!

That looks delicious, but know it's not. lol I can't eat liver, just hate the flavor of it. A thin sliced steak under there and it would be awesome.

Once a month when I was a kid we'd go to Sunday dinner at a greasy spoon. I loved their liver and onions with mashed potatoes and peas. I need to make some once I get back to the land of milk and honey in a couple of weeks.

Huge fan of deer liver. It is one of those meals that go with the season. Best cooked and eaten very fresh.

wife makes liver every now and then. She pan fries it with onions and bacon.
Fry the bacon first to get a pan with bacon grease in it, fry the onions and do the liver last.
Don't take long to cook liver, watch it so you don't over cook it and your good to go.

I love the stuff.

Re: Love it, Hate it, should try it - 02/07/22 12:33 PM

Zim, soaking the liver for a few hours helps to remove impurities, softens flavor, and tenderizes the liver. It really moistens the meat and brings out a very smooth flavor. Sometimes liver can be tough and strong in flavor. I have found that the milk and cream bath does a great job with that respect. Not over cooking it is another problem with not having a good liver dinner

Re: Love it, Hate it, should try it - 02/07/22 01:01 PM

Dont care for it myself, but I eat it from time to time. Dad always like a liver from a fawn, but older deer, up here, tended to have liver flukes. The last liver I ate was pork liver, cooked up the same way, tender, in onions, and not overcooked.

We had liver and onions a couple of times a month when I was living at home growing up. I vowed I’d never eat it again when I moved out on my own. I can and do eat about anything but liver just gags me, don’t know why, just does. I always thought that was a waste of totally good onions.

great dinner Bob! I also really like liver and onions. in Russia there is a tradition, after a successful hunt, we fry the liver of the mined elk, deer, roe deer.

We had beef liver often when growing up, probably cause it was cheap...but mom wasn't a great cook, so it was pretty bad, lol

BUT, I would later cook deer liver which was very good, however the best liver I ever had was pork liver from my pigs...Highly recommend that for liver lovers....If you can get it.

I like pork liver. Very mild flavor.

Nessmuck, oil filter? Last I knew the animals most people consume are plant eaters. Hogs are omnivores and many feeders use fish meal and/or meat and bone meal from beef processing as part of the ration, but its a small part. No "oil".

That's exactly how I make it too. Good stuff for sure. I've tried to eat deer, elk and antelope liver but just can't make myself like it.

Had a friend I saved a beaver liver once for. He claimed it was good, but still don’t believe him! Only way I ever could choke down liver was to flood it with catsup! I gave up trying it after I moved out of the folks house about fifty five years ago!

Its a funny meat for sure. People either really like it or can't even stand the smell. Doesn't seem to be any middle ground.

My dad made a stew one time and I ate a bowl, loved it, and had seconds. The meat in it had a strange texture. I asked what it was. He said liver. I then immediately found the stew gross.

Maybe…..if it ain’t got those little spots on it….and for someone that likes liver. Someone earlier said it right, better for a lure ingredient or base!

I meant ...that the liver is the body’s oil filter ... it filters out all the toxins from the blood
