I go to Sam's Club and buy a 12-15# beef round. Cut it into roasts, grind into burger or whatever else. 3.59/# I think.

I don’t have any favorites that are cheap. Going to put a Tri Tip on the smoker later. I don’t consider it expensive or cheap. After a low and slow smoke I’ll sear it on the gas grill.

Re: Favorite cheap beef cut ? - 05/08/22 09:12 PM

Get you some beef shanks and dig out your dutch oven. Put some oil in and hang the oven over a fire with a tripod. High enough it dont get real hot. Brown the beef on each side in the oil. Lay them aside. Put in some chopped up onions celery and carrots. Cook em a few minutes in the oil till they tender up some. Put in some tomato paste and cheap dry red wine. Add some tomatoes , garlic, rosemary, and salt. Let it come to a simmer. Put the shanks back in and push them down into the bottom of the oven. Put the lid on and let it simmer 3-4 hours.

Chuck eye is poor mans ribeye very good. Round steak run through tenderizer twice then grilled is good. Ribs and ox tail are my favorite"cheap meat"

Re: Favorite cheap beef cut ? - 05/08/22 11:19 PM

I like grilling a chuck roast like it's a steak. I get ribeye end steaks for $6 a lb. So I eat them pretty regular. It is the first steak cut off the loin and the last. They are not a good even thickness. But a good piece of meat for the price.

Yup, with a tmr, some people also incorporate pasture. Builds frame and some believe flavor. My 15 monthy olds fatten around 1300 where as my pasture calves fatten around 1500. Makes for a nice check.

Re: Favorite cheap beef cut ? - 05/09/22 02:47 AM

All our calves finish around 1500 pounds. Our fall calves are weaned then are on pasture for 5 1/2 months. 330 is taking 2 1/2 year to finish his.

Well I didn't Grow up a Farmer....I just Try
I raise them on low to mid grade pasture. Mineral ...till 20 months 3 months winterized grain mix 3to 5 lbs hay , mineral . Then butcher.
I don't have choice silage.
So what's a better way.?

Re: Favorite cheap beef cut ? - 05/09/22 03:26 AM

I was wondering if there was a niche market or other reason that they were that age when they slaughter? Are fall calves just get good hay and moms milk till weaning at 7 months were they will around 550. Then 5 1/2 months of grass. They will come of grass about 800 give or take depending on the year. Then a grower ration at the ranch for a month and a half and weighing about 950. Then to feedlot for the last 120 days. Grain in the grower ration and finish ration. We are blessed with some of the best grass there is here in the flinthills. I'm sure that is some of our advantage. If they aren't on good grass or nursing momma it takes grain products to make them grow. Costly nowadays but it shorts up on the time till slaughter.

Re: Favorite cheap beef cut ? - 05/09/22 12:32 PM

two ways I get cheap beef

the bargain cooler at the grocery where they put all the stuff with damaged packaging or about to reach expiration.
got some nice steaks Saturday from that bin half price we had them yesterday for mothers day super

the other way is Downer cows , I am not a very good butcher for steaks so I get a some out of the back-straps , tenderloins and a few out of the hind quarters then grind the rest.
these are always very very lean because it generally means a stomach issue that was keeping them from eating.

To give you some idea of our cheap beef prices.

Flank steak (on sale) $9.99/lb
Sirloin tip $9.99/lb
cube steak $6.99/lb
top sirloin $10.99/lb
shoulder steak $6.99/lb

I'm seriously jealous of anyone buying beef for $3.99/lb!

Re: Favorite cheap beef cut ? - 05/09/22 01:33 PM

About a week ago my Wife said I needed to go over to her Sister's to pick up some thing she didn't have room for in her freezers . They had a couple of their beef butchered that week . Came home with about 150 pounds of free beef . We buy very little beef , mostly burger for chili or patties . Ain't even sure what some of this stuff is . Lots of marbling in it . Her Sister said it would grade choice , that a good thing I guess . Cooked up one package of steaks that looked interesting . It was pretty good stuff . We will try to get all these freebies eaten before they get to old . We will be spoiled by then I suppose . Sister-in-Law said they are getting a couple of hogs done up in a few months , and we will need to get some room in the freezer for some of that . Nice to have a hobby farmer in the family . They have a very good income and ranch just because they can . Anyway Wolfie can't tell you what cheap cuts are best , might have an idea about the better stuff in a few weeks after we work on this freezer load .

Tenderloin is the best of the best but $28/lb? I was buying Tenderloin from Kroger 3 years ago for $8.99/lb. 8% inflation my foot.

Re: Favorite cheap beef cut ? - 05/09/22 01:57 PM

Take a chuck or shoulder steak with good marbling, hack it real good on both sides, I use an old coke bottle, rub in meat tenderizer, black pepper, and garlic salt if you like it, put it in a zip lock bag and then in the refrigerator for a day or two and then grill it for some tender tasty lower price beef.
Posted By: BernieB.

Re: Favorite cheap beef cut ? - 05/09/22 02:26 PM

Chuck eye is the shoulder end of the loin, so it basically a ribeye without the look that most people want. Very good steak for the money. However, with more people being scared off from the price of ribeye, more demand for chuck eye has driven the price of that up as well.

Flank steak has good flavor but has to be cooked right for it to be tender. Lots of good, overlooked cuts available but unfortunately it's all going waaaay up these days.

Been sticking with the .49 cent chicken leg quarters...10# bags... Beef here is crazy high, even the stuff no one wanted 3 years ago. Costco ribeyes are cheaper then most of the "cheap" cuts. Still high, but cheaper...who would have guessed...

Even brisket is high. I have more than once bought brisket cheaper than burger and just ground it. Not any more. By the time you trim it cost is higher than burger

I
Favorite cheap cut is cube steak fix with some mashed taters and gravy!

We buy our beef a half at a time though so it all cost the same per pound, so in that case o prefer eating a medium rare ribeye
Posted By: Badger23

Re: Favorite cheap beef cut ? - 05/10/22 06:21 PM

Chuck eye, flat iron and just get a roast if you can get one for around $3 or $4 a #. I usually check out the store to see what's been marked down to sell quick.

I also eat a lot more pork. It's far more reasonable price wise. If you're in Wal Mart check out the pre packaged pork loins the sell. The honey siriacha is pretty good, I haven't had the jalapeno flavor yet but got a few in the freezer that were reduced down.

I catch ribeyes on sale at Harris teeter for 8.99-9.99 per lb. I picked up two packs of filet mignon for 10.99 per pound last Friday. I’ll also grab just about anything with a good markdown. It’s hard for me to pass up cheap meat. Grabbed 3 flat iron steaks last week for less than $5.00 for all of them.
