Any of yall gotta good recipe for yellow squash.. - 07/06/22 06:19 PM
Crook eckhart and straightness varieties?
I usually just fry them but they're coming out my ears...I'll probably have another 20 to pick tonight..and I was just interested in any recipes using them yall might like?
The info would be appreciated..even the chickens can only eat so many of em.
I ended up with 29 plants all told including the volunteeta.

You can grill them , there's a way to can them and later during the winter , draining them and frying in butter .

Trim the stem, wrap in foil with a slice of sweet onion, pat of butter. Bake until tender, 20-30 minutes.
Split and eat with more butter and salt and pepper.

Cut lengthwise in half. Scoop out seeds. Fill with a mix of ground meat, rice, stewed tomatoes. Top with shredded cheese. Bake in the oven on 350°F for 45 min to 1 hour depending on size or until soft. Enjoy!

Cubed with onions and potatoes cooked in butter (I always used the microwave).

Squash casseroles. Cook them 3/4 of the way done and freeze in disposable aluminum trays. Get out in the winter or whenever and put them in the oven, warm back up and finish cooking

I've got some on the stove right now. I just cube up and boil. Just boil long enough so they are tender. Then I make a simple cheese sauce and stir it up with the squash.

Slice thin. In a bowl combine a cup of flour, a tbsp of corn meal and enough water to make the ingredients thinner than pancake batter but not runny.
Cover the bottom of large skillet with vegetable oil over medium high heat.
Dip the slices in the batter and fry to a golden brown. Lightly salt.

Slice them up. Add lots of onions in a large cast iron frying pan. Add salt, pepper, and bacon grease. Cook about 30+ minutes on medium heat, stirring constantly until squash and onions are well browned.
If you are from the South, you already do this.

I pick small, 6 - 8 inch, slice lengthways, smear with butter so seasoning sticks then on a hot grill. They sear and soften pretty quick. Use a combo of seasonings you already have and like.

Butter and onions in sauce pan, add cubed squash,, do not add any liquid. Put lid on cook slow for about 40 minutes, like salt pepper and garlic powder added when done. Could make a meal with some fresh cornbread.

You can slice them and blanch them and freeze them. They keep well just Google it.

I have taken a squash, zuccinni and onion, some butter and seasoning of choice. Sliced thinly, all mixed in a bowl and microwaved until soft.

I just cube them up and simmer them down in a sauce pot with some onion, salt, pepper, butter and a touch of vinegar.

Southern Sweet Squash
Cook down a pot of sliced squash with a pinch of salt, a 1/2 or a stick of margarine, a cup of sugar, and cinnamon to taste.
Cool it until it’s moist or cook it down until it’s candy. Your choice. I like it halfway.
Smoked meat squash
Fry down/brown some bacon or quality smoked meat with 2 onions and seasoning to taste. Salt/cayenne/garlic powder/onion powder. Add squash and cook it down. Eat as is or serve over rice
