Any of y'all have a good Texas style chili recipe? I know I could just google it, but thought maybe one of y'all have a time tested secret family recipe you'd be willing to share.

I'm a Louisiana transplant to Texas. Always baffled me when I make chili over here, they always want a pot of pinto beans cooked also. Most of them would put a big spoonful of beans in their bowl of chili! WTH just let me cook it with the beans for crying out loud.

I can take or leave the beans so long as there is some fresh diced onions (still crunchy) and cheddar cheese ro8 top each bowl off.

I prefer Mexican chili Colorado myself , no beans and a slightly different flavor.

My wife makes an awesome elk chili. With or without beans doesn't matter to me.

Just be aware that the competition recipes are NOT intended for family consumption. They are designed for one bite judging and are appropriately SPICY.. read hot!!

The best chili is brown, not red, and your spoon should stand up in the middle of the bowl before you add the toppings. Oh, and cornbread is mandatory, and cinnamon rolls for dessert.

On the competition page NONE of the recipes have beans in them.

I may be a dam-Yankee, but I know Texas chili when I taste it!

Mark,,When I worked in Houston for a couple years,,i went to a Chilli cooking contest and tried some Armadilla Chilli.It actually was pretty good. smile
