I like eggs poached the way gramma did. I still do it time to time. Bring water and cider vinegar to a boil in a sauce pan. Beak a couple three eggs into the water. Let em cook a bit but leave the yolk runny. Scoop the egg out with one of those big spoons with holes in it. Put the egg on buttered toast made with home made bread.

What does the vinegar do? I make my poached eggs this exact same way but never used vinegar.

The vinegar helps keep the whole egg together.Give it a try and you will see the difference. You only need about a teaspoon full,,and you can use white or applecider vinegar. Also,,making your own Hollandaise Sauce is very easy and delicious if you like Eggs Benedict. smile

Right. Why go through all that when you could have eggs over easy or scrabbled. People try to perfect things that are already perfected!

With a big side of home fries and half a pound of bacon. A couple pieces of buttered toast would be a great addition.

LOL You're getting to fancy for me.
Next you're going to show how you soft boil an egg , and put it fat side down ,in one of those tiny trophy like things. And tap around the pointy end until you can remove the shell and scoup it out.
You want egg yoke on your homefries or pancakes , sunny side up or over easy is the same .
LOL

I have to admit , that poached egg pan in neat

I would like to use those little individual trays in a frying pan , and then make an egg samwhich with a biscuit cut in half.
Sauage or bacon added . Forgot the cheese.

LOL I was thinking of using tuna cans with the bottoms cut out.
A lot cheaper.

Re: My Mom was a Poacher - 09/24/22 04:09 AM

LOL All this talk about eggs , I had to go fry a couple out of my water glassed stock , no fresh ones on hand.
Top ones are around a year + old , as I take old stock out and put the new ones in, and then add the old ones on top, then refill with more lime and water.
Good eats.
