Got enough salt in there? That could be what's missing.

looks good

I have stock on , thinking chili tonight , probably chicken and beef I have some chicken thighs I butchered up for fajitas last night , bones & skin went in the stock pot I have a about a pound and a half diced up chicken and some left over beef from Sunday night.

definitely a pot that can be kept hot and ready to eat for fowl weather.

Re: Beef stew - 01/21/25 04:26 PM

X2 on the salt, a spoonful of whatsthishere sauce can help wake it up, I like to make a peanut butter colored roux to finish stews for flavor and to thicken it up, thin stew is just soup.... crazy

Not really stew related but I watched your YouTube videos wolf dog and you sound a lot different than I expected u guess I just have ways I think the guys on here sound and they’re not always accurate

Re: Beef stew - 01/21/25 04:37 PM

Rutabagas rock, I use them in place of potatos all the time. I make a diced, roasted rutabaga dish that the family goes nuts for.

Re: Beef stew - 01/21/25 04:38 PM

Rutabaga are root vegetables.

Couple cans of corn would add some color and flavor.

Re: Beef stew - 01/21/25 04:59 PM

in Miss you could probably start Rutabaga about Halloween and harvest about Valentines day they like 50-65 degree days for growing to maturity

run some tillage root at the same time and shoot the hogs that come in to root at them.

got to have rutabaga in a pasty potatoes won't cut it

and there is only 12g carbs in a cup of cubed rutabaga where potatoes are more like 35g

they hold up better keep shape without going to mush but have a nice buttery flavor.

most of the time in the store you find them dipped in wax they will keep a long time like that , you just use a vegetable peeler to peal the wax and skin off and then cube or how ever you like to cut them
https://en.wikipedia.org/wiki/Rutabaga

ok how about Chard , do yall use chard down there

stuff would grown year round in Miss , and be an excellent ground cover , keep cutting and eating all winter , they don't mind a couple inches of snow they spring right back when it melts.

rutabage , turnip , parsnip and carrot , make nice bite size pieces about the same with all of them, with some smaller pieces of sweet onion toss in olive oil with salt and pepper and bake in a big skillet in oven about 350-375 till they have just a little color on them, very good roasted roots.

that is some good stuff

No need for extremes. Just need a few tablespoons of tomatoe paste.

BTW, didn't you say you were making something for a cold day?

Re: Beef stew - 01/21/25 05:32 PM

Needs potatoes, corn, green beans and a jalapeno. I like tomatoes in mine and personally would add a can of fire roasted diced rotel tomatoes,

Looks good tho

That would turn it into vegetable beef soup. Beef stew just needs carrots, potatoes, and beef,,, well and onion.

To me that looks like a good soup, a stew you should be able to stand a spoon in it.

Re: Beef stew - 01/22/25 12:53 AM

Bob, yep I do like stew to be thick. I make a roux with flour and oil from beef browning process to thicken it with.

I prefer beaver stew.

Either way, it needs to have potatoes, onion, celery, cabbage, carrots, corn, green beans and pearl barley. And absolutely needs some home canned tomatoes in there too.

Nah, stew is brown...don't know what that red stuff is called...and chowder is white!
Tomatoes need not apply....
Posted By: RegularJoe

Re: Beef stew - 01/22/25 02:55 AM

Like a lot of good trapping lures, the base can turn into something greater than itself, tomatoes cooked down turn brown and don't taste like maters no mo.

Mama, and me now, always add a jar of Ketchup to beef stew. Delicious!

Re: Beef stew - 01/22/25 04:12 AM

Good beef stew has 4 ingredients. Beef, beef broth, potatoes and cabbage. No tomato anything, nothing else. Adding anything else is Kinda a mortal sin like putting beans in chili!

You might try adding some sage.

Rosemary goes well with beef, and no tomatoes in stew!
