Has anyone ever read any place just how deep a Mole will dig in the winter or that matter of fact anytime?

They will follow the food below the frost line.

I've read they will go down 10 feet, but never proved it. A few years ago, freshwater lines going into houses were freezing. They are down 5 feet here. Worms were obviously below that.

Yes deeper than the frozen ground. at any given time. also super dry ground drives them deep also.

Our moles seem to migrate to landscape and mulch bed areas in periods of cold with semi frosted ground or into the non frosted hill sides. The ground stays more workable in these areas.

If we have some mild snow cover it thaws the ground enough that they do lots of mounding here in the winter as the snow insulates and thaws the surface areas.

I believe there are some simple factors that determine depth of burrowing and the time of year. Moisture and water saturation dictate much of this behavior as does ground surface heat and soil hardness. They stop advancing completely when it gets hot here they just cant dig and the food sources goes down and moves to more comfortable and life sustainable places or depths.
