Eating nettles is a great way to get revenge on the little stingers. Pick the whole plant when it's less than 6 inches high, or as it gets older just pick the bunch of new leaves at the top. Oh yeah, wear gloves! Drop the plants in boiling water for a few minutes and they become like rough spinach. As soon as they touch boiling water the stinging hairs disappear. Nettles contain a lot of protein and are actually more nutritious than spinach. You can use them like you would any other cooked green. I also like to use them as a replacement for green beans in a green bean casserole.

i used to sell the roots.........they were used in shampoo.
we call them itchweeds here
I like to cut it up in my eggs.
They are loaded with oxalates....so if you have kidney stones...stay away from eating them.
