The important fur on a coyote is the back fur. The legs should be pinned wider than that so that the fur bunches up at the tail base.. Tough to tell what board you are using. Looks like a split board with really narrow legs.I'll snap a picture of the belly side of one today and post. Looks like a real nice Coyote.
Short legs long legs It's no big deal. THey aren't looking at buying leg fur. It's all In the eye of the beholder.
I watched 1000s of coyotes being graded they don't look at how long the legs are I can guarantee you on that. But the longer hind legs do look a bit nicer on the board.

Width at the bottom of your split board is of no concern. The critical measurement is 39" down the board which is 9" for a large animal and 7 1/2" for a small coyote per NAFA specs. I would also pleat the butt over like you do but I also squared it off as much as possible by tacking to a heavy cardboard or shake tacked to the split boards, which I also tack the tail to.
