Since coon prices in my area are basically zero. I’m considering skinning and freezing them in a air tight bag. My question is how long will they keep with out damage being done?

Let's hope they keep until the time machine is perfected and you can travel back to 1979. smile

Stretch and dry them and then put them in the freezer-less risk,and more options to market when the time/need comes up.You can sell a few now and then to guage the market,to help you decide when and how many to move.
You can also grade and size stretched and dried fur to meet specific alternative markets that are out there.

They will last a long time but probably get freezer burn unless handled as Boco suggested: "Stretch and dry them and then put them in the freezer-less risk,and more options to market when the time/need comes up."

my plan this year:

-skinning, wrapping in newspaper flesh side in and freezing.
-fleshing and putting up in the spring
-vacuum seal and freeze if I don't sell.
