hello all, i killed my turkey and when we cleaned him he was to big to fit in any of the containers we had (23lb bird) so we had to bone him out. what is some recipe's that we could use on just the meat of the bird?

Turkey pot pie is awsome.
turkey nuggetts-
cut the breat and thighs into chunks (nuggetts)
bread with your favorite breading and deep fry

Barbacue turkey
Cut the breast into steaks
marinade in favorite barbacue sauce for 15 min
grill and enjoy
Dont over cook!

I do a sweet and sour turkey, it is great. cut the breast into bite sized pieces and par boil them to tender. I have used the pre mixed sweet and sour from the grocery store. put the boiled pieces in a pot and puo t the sauce over them and slow cook for several hours. serve over rice or chow mein noodles, I love it and every one I have served it to say it is great.

Made this last year with one of my birds.

Turkey Parmesan

Boneless, skinless breast halves from 1 wild turkey
Beaten egg
Breadcrumbs
Vegetable Oil
Tomato sauce
Shredded or sliced mozzarella cheese

Steam turkey breast until meat is white, then set aside until cool. Slice into slabs 1/2 - 3/4 inch thick. Coat slices with beaten egg, then roll in breadcrumbs. Fry until golden brown in hot oil. Layer in baking dish, alternating meat, tomato sauce, and mozzarella cheese. Cover dish with foil and bake at 350f for 30 minutes.

One of our members, Tara Wooley (Stoat), came up with a FANTASTIC recipe for Turkey. I've copied it below. Very easy, and excellent! She calls it Turkey 'caul' casserole

She says:

Place 2” pieces of fresh wild turkey meat in bottom of casserole dish.
Stick similarly sized pieces of cauliflower in between meat pieces.
Slice mushrooms and layer on top of meat and cauliflower.
Mix cream of broccoli soup with half as much water as soup calls for and then pour over mushrooms. You can also mix in shredded cheese with the soup for a cheesy surprise.
Serve over wild rice.

We've had the same problem as you. Butterfly the breast so that it's not too thick. Barbeque it on medium heat and baste with Italian salad dressing. It's a good, easy way to prepare it, and you'll be happy with the results.
