I used a commercial mix to make Beav jerkey last week. Turned out great. It's a good way to use up meat after the backstraps an hocks are taken off there's a lot of meat left.

There is a very easy way to make beaver jerky (or any kind of meat really).

I buy my jerky cure and seasoning in a kit from canadian tire or walmart for around $10 i think.

All you need to do is grind up the meat into burger, apply the seasoning and cure as directed on the box, let sit for 24 hours then roll into 1/4" strips and put into the oven for an hour or so (depending on the temp, thickness of meat, and your preference of how chewy or dry you like your jerky.

Its extremely easy and very tasty. Buy the jerky kit at a store near you and it will give you step by step instructions on what to do.
