1 lb Coyote (use hind quarters and backstrap)
1 cup onions diced
1 cup carrots chopped
1 cup celery diced
3 Garlic cloves
cedar plank

Use a clean flat cedar plank that has soaked in water overnight.
Lay Coyote meat on cedar plank de-boned
cover with vegetables
crush garlic over
cook at 350 degrees until golden brown
scrape the cedar plank clean and eat the cedar plank it will taste better than the coyote will
same recipe can be used for Carp and possum

I started laughing five times over. Read it because I couldn't imagine anyone eating a yote unless they were real hungry. Friend told me about catching a fox and eating it on a camping trip a long time ago. His adamant advice was "don't bother".

Hey now, I've never tried coyote, but possum and carp are really good! I've fed carp to many many people and not one didn't like it! In fact most people love it and ask for seconds an thirds!

Carp is a great fish to eat. You will be surprised to see how high it is priced in Germany or Czech Republic for example. Carp also is very popular in Jewish cuisine to make gefilte fish. The only problem in American culture with carp is "Y" bones. We are not use to eating fish with our fingers, but if anyone traveled abroad, probably noted whole pan fish being served in restaurants. There is one famous restaurant in Prague serving game meat and wild carp with great Czech beer of course

Classic joke.

On the one hand:
Norwegian hunter Kristoffer Clausen does not like the taste of boiled Red Fox head. In my experience boiling is the worst way to cook any meat. A Wild Man Eating Red Fox

On the other hand:
Coon & yote tasting at a Dave Canterbury Advanced Scout Class. Beginning is skinning one yote and showing the heartworms in the heart. Then he goes over camp setup. At 7 min they start eating coon and about 8 min eating a different yote. "Tastes like roast beef" "Tastes like steak".  Advanced Scout part 2

I watched a video on youtube with Dave Canterbury where he trapped and ate a coyote.

I don't think I couldn't bring myself to eat coyote, but honesty the first few I've skinned out really made me think that maybe they would be great for teriyaki skewer's. The meat just looks good.

Colonel Townsend Whelen stated that "it is all food". Teddy Roosevelt ate things in the Amazon expedition from jaguars to monkeys. It is all what is accepted as Indians ate dog as one of their prize feasts and the Comanche's most prized delicacy was a foal cooked in it's own placenta. The Scots eat stomach linings and the English eat neck glands.
I am reminded of Teddy Roosevelt in his books on the American West. If you read them from front to end, you find that he was fussy in 1880 in stating the flesh was not worth eating on some animals, and it was just back straps and tongues. By the time he was finished on the Elk Horn Ranch in North Dakota, he was eating the last scrap of every animal which was brought in.
You have to understand that beef and pork is castrated. So if you are eating an old male fox, which has been fermenting in it's hide, it is going to taste like an old bull buffalo which did not have it's hide pealed quick enough.
Proper meat preparation, removing fat as in beaver, letting it soak in salt or soda to leach the blood out, will turn most meat into something savory.
In closing, we raise our own chickens and butcher. Sometimes though we have to purchase the ones available in the stores which most people are eating. The scent of them cooking in a pressure cooker makes me almost gag. You can smell how long that meat was hung in the plant, the chemicals it was washed in and how long it has been in the display case. It is worse than road kill. That is what most people are eating and they think it is good food.
Food is all perspective.
