well topic says it got a few tree rats and wanna a new idea for cooking them

Boil the meat off...pan fry...sit aside...make some white gravy using a little of the water used to boil the meat...while gravy thickens add meat slowly. Bake some cornbread and eat like a fool!

Also, you can fry it up just like chicken using your favorite breading!

My Mom fed us real well on the tree rats my Dad and I would bring home by browning them a bit in a fry pan and them putting them in a pressure cooker with salt,pepper,a couple of rings from a sliced onion and a few strips of bacon. The meat would fall off the bone and I could't quit eating until they were all gone!! Then we would go and get some more.I just don't see many folks limb rat hunt as much as I used to.

For a big pot:
13 squirrels cut up, ribs pitched
5 cups uncooked rice
10 cups water or chicken/beef stock
4 cans Cream of mushroom soup
Any handy veggies: carrots, green peppers, celery, green beans, mushrooms etc

mix water and soup in pot, put squirrels in, add rice and veggies.

Bake at 350 for 1-1/2 hrs or till water is absorbed.

YUM YUM (Works well in Dutch Oven too)

Sometimes I'll put tube biscuits on top for the last 10-15 min.

I have been cold packing them. Really good with home fries & beans mixed together! Later J.J. or as above fried & pressure cooked

I put em in home-made vegetable beef soup...minus the beef. Do like normal but add squirrels instead of beef to the crock pot. Do it in the morning on med. and it will be done by supper. Take a slotted spoon and scoop out the bones before family gets to it!!!lol....shane

Dumplings are great! Also , fry the young ones with gravy and bisquits. A Sunday favorite when growing up, breakfast or lunch. Daddy loved the brains so the heads were cooked in the dumplings.

I'll have to find the recipe, but crockpot squirrel is even better to me than gravy or dumplings. I got the recipe from an uncle and fixed some and man was it ever good. It is now what I do with all the old ones. We cleaned it up.

I like to take my squirrels quarter them, then flour,salt and pepper them. Fry in a skillet for about 1 1/2 minutes on each side, the remove for grease. add flour and water to grease to make a thick gravy. once you have a good thick gravy with the lumps worked out, put gravy and squirell in a pot of water and cook at simmer until the meat starts to fall of the bone. Cook a pot of rice, and serve gravy over rice and you got a meal fit for a king. lol also good with rabbit mixed in with the squirrel.

Take your days catch, skin, clean the flesh and place on waxed paper.

Now take the waxed paper and put it in the back of a pickup truck.

Drive the truck to a culvert.

Carefully pitch the mess into the culvert making sure no one sees you.

Drive away at a high rate of speed.

depending if there young one ill just fry then like chicken the olders ones ill either put in gumbo or pot roast them

Pressure cook them for about 20 minutes until it falls off the bone. Mix with bbq sauce and a little liquid smoke and put in a pan on the stove to heat it all up. Put on onion rolls. Pulled squirrel sandwich.

Grilled squirrel legs or debones, rolled in flower squirrel nuggets are hard to beat.
