Eating Mink?

Can't find anything on eating mink. Meat is meat in my book unless it's a puffer fish or something crazy like that, but I'm wondering why I haven't heard of someone eating it. I've heard of eating yotes but not mink. So how is it? I have one in the freezer.

I've eaten and enjoyed a bunch of different critters, but I'd have to be mighty hungry to eat a mink.

I've tried about everything in North America. In my opinion, all the mustelids that I've tried (river otter, mink, marten, badger, wolverine) have not been particularly tasty, some worse than others. In particular, mink was tried once, and only once. Not overly delectable cuisine. I disagree on your statement that "meat is meat". On the other hand, Mephitids (skunks), believe it or not, aren't too bad. Google the name "Chicago" and see where that word came from.
