Syrniki is one of my favorite treats to make in the winter time. Not really sure why I only make them in winter but whatever.

If you've never had them its like the love child of a cheesecurd and a pancake.

You start by making some farmers cheese (tvorg) overnight. Drain and press it. Then simple mix in an egg or two, a little salt and some sugar and just enough flour to make it come together. Hand form little pancakes and fry in butter. Serve with your favorite preserve and smetana.

Figured I'd share because Mike-in-A-Town and his family crossed my mind when I was deciding if I should make them or not.

Kind of...I think.

Dump a gallon of whole milk in stainless pot, add half of bottle of butter milk, heat very very slowly until it steams, turn off heat, cover, wrap in towel. Next morning it should be ready to strain through clothe.

I should add it takes a while to strain.... So once it's in the cloth I tie it off into a spoon or something and hang it over a bowl.


Also...you can keep the liquid (whey) and use it in baking. It's a good source of protein.

Russia but I feel like most northern European groups have something similar. Like the cheese in a cheese danish.

A cheese pancake!!! I'm in,but it looks like a lot of work that I could mess up at 2 in the morning. Is there a place to buy them an heat them up as a sample run before going through all the trouble?
