I ate part of a marmot (a rocky mountain high country groundhog) when I was a kid, roasted on a fire. was pretty tough and strong tasting.

Had a old man used to can them. He'd give us canned bear, hog, and groundhog. Just pour in a pot and heat. Pour the grease over cornbread and it was a fine meal. Sadly this guy passed last week. He was the last child born in the Cataloochee Valley in NC before the park service ran them out!

Sorry about your loss man. Ok update bland not tough but couldnt eat the rest of it cause no flavor and all you could taste is the water it was cooked in. Next time im gonna give it some cajun seasonin and it aughta be good. My review ok if its plan. They are kinda odd the one i skinned had no backstrap at all just a center line back bone and ribs. Its whole back was just flat

Never ate one but around here living on alfalfa as they are vegetarians and rodents like beaver, rats I would assume them to not be too bad. Slow cooking can take care of the toughness and other ingredients can take away some of the stronger taste. Given the choice I would much rather eat a ground hog that ate in my garden than a grinner that spent the winter eating out a dead cow.

No offense to any of you wild gamers, but I'm gettin' a big ole Black Angus ribeye out for tomorrow. Had a nice salad, followed by a hot pork sandwich, smothered in pork gravy tonight.

When i was a young child back in the 60's there were two older black gentlemen with a couple 13 year old kids that shot groundhogs on farms in our area. These two gentlemen where out of Indianapolis they shot several every Saturday and Sunday if I remember right they skin and put on ice and took them back to the city and got 3dollars for the young and two out of the older ones. They shot several hundred over the years.
My mother fixed the young ones never saw her cook it, I delivered it cleaned she took care of the rest, real good eatin.

I have pressure cooked many Woodchucks, but I browned them up after the pressure cooker tenderized them. Good eating if they are not too old.

Groundhogs are one of the cleanest animals. This statement comes directly from one of Punxsutawney Phil’s handlers.
