If I was going to eat a beaver in the summer, I would shoot it in the head first, so it bleeds out a little. Check your laws first...or don't tell the whole world about it. Put it up fresh.

I would trap it in the winter and then freeze it to eat in the summer.

Use a foothold with no drowner and a long chain in an area the beaver can get to deep water. Check it early in the morning.

Giardia is the most common parasitic infection in Canada. It's main cause is eating warm weather harvested beaver meat. Google this. Where are you finding this. Giardia is a parasite in the intestine. I'm unable to find anything saying that giardia is in the muscle tissue.

I thought giardia gets contracted from drinking the water that beaver dwell in, without boiling it first. Cook all the beaver meat you want and eat it.

Giardia is in the beavers intestines.Passed into the water from the beaver feces.Commonly called beaver fever when contracted by humans.It is easily treated once diagnosed.Symptoms are uncontrollable diarrhea. Tularemia is what you need to be concerned about. It is prevalent in rabbits,muskrats and beaver when they are overpopulated.Tularemia will wipe out beaver over a widespread geographical area. Check the liver when cleaning these animals for consumption.Tularemic animals will have white lesions on the liver.Dont consume any animals with white spots on the liver. It can be a debilitating disease when contracted by humans with long lasting effects.It can also be treated but if left too long before treatment damage will already been done.Symptoms of tularemia are sore joints and other flu like symptoms. Trappers should always wear protective gloves when skinning,and use bleach when cleaning up tools and skinning area.These simple precautions will keep you safe. As far as being fresh enough to eat-your nose will let you know the answer to that one.
