I have a Caribou that really works well. Before that I had a Necker 600, which was a good fleshing knife. Before that I had one of those cheapies, that worked about like you'd expect for the money you paid for it. IMO, Caribou is the best of the three, but the Necker is still a good knife too.

there is some good ones out there,i have a necker it is stiff and good for some things, I also have a caribou its more flexable and the one I use most and I like it. like I said there is others that are good. if you can have someone in your area show you and let you handle it would help you. good luck

Sharp on one side, dull on the other. Sharp side really holds it's edge.

Maybe I will get the Lee Steinmeyer. Does the sharp side come sharp or do you have to sharpen it?

Another vote for the Steinmeyer knife. I have his parallel knife. The sharp side is extremely sharp. I’m going to order another one of his knives, the mini, this spring.

Eh...wot?

I've been using a sheffield for 40 years, but I think I'll buy one of Lees just to have it, they look almost identical.

I think you should get one of Lee's and a caribou. I have never used Lee's knife, but I have used a Sheffield, which is a similar design. The Sheffield was hard on my body, too big and heavy for all-day work, for me. I bought a Caribou several years ago and it is light, sharp and has a flexible blade. I found it much nicer for everyday work. My $.02. BTW, I have done commercial fur finishing, for what it's worth.

I've been playing around fleshing beaver over my knee with a beaver peeler. This might be a Russel, not sure as there are no markings on it. It might go back to the 1860s, I don't know, but it's neat to use early tools.

Another vote for Lee. Great guy, great products! I have the parallel knife. I HAD a Wiebe Elite, it's a decent knife, I got rid of it after my first raccoon with the Steinmeyer. Lee's knife is 10× better than the Wiebe.

For me it was a toss up between the Post and a Steinmeyer last year. I ended up going with the Post, mainly because I liked the shape of the handles better. I don't think a person could go wrong with either one. my 2cents

I used a Scheffield knife for years. They are a great knife, But I bought one of Lee’s parallel knives last fall. Lee’s knife is fantastic.
