And sauce, and juice, and V8, and diced and and and.... I'm about sick of seeing tomatoes. Anyone else in full swing canning up the garden's harvest this summer? Today's project was soup. 24 pints of tomato soup all sealed up and ready to store for the winter. Nothing like tomato soup and grilled cheese on a cold January day. This is the recipe I used, and it was the best tomato soup I've ever tried. I did reduce the sugar by half though. https://www.food.com/recipe/moms-best-tomato-soup-canning-recipe-44058

have yet to get a ripe one yet
should be any day now Iam with you Pete….just green…BUT , I did eat 5 cherry tomatoes that were red…and dang they were good !

Way ahead of us up here. I have a couple turning red but am a long way from having serious amounts to process. I am having some disease starting now and I had sprayed more this year for fungus protection. Doing my first pickles as well. Almost done with cauliflower, broccoli and green beans. Looking at our records when harvest started we are about 10 days ahead of the normal here this year.
What is your tomato soup recipe? I like mine with some kick to it.
Bryce The link to the recipe is in the first post Bryce. No kick to it, but you could easily toss in a few peppers when cooking all the other veggies down. I only used half the sugar called for in the recipe, and to me, it turned out just perfect.

Oh my, frozen green beans? Nothing beats a jar of home canned green beans with a half piece of bacon in the bottom.

Soup looks awesome! Sadly I haven’t done any canning yet this year and probably won’t if I can’t find some American made canning lids at a reasonable price. Stores have been sold out of canning lids here since the covid hit last year ... no one has them in stock and they cant get them. You can buy all the JARS with lids you want, but just the lids by themselves —NOPE , out of stock.
Ive just been freezing green beans so far and that works fine and is less work than canning . Probably be a couple weeks yet here before the tomatoes start to ripen. Looking forward to fresh tomatoes! Check dollar general stores. It's where I've been finding mine. They're Golden Harvest brand, made by the same corporation that makes Ball lids, but I prefer them over the Ball lids.
