Bull.Firmer meat than pickerel.Not as firm as sturgeon.

That hasn’t been my experience but like I said when I used to go north I never fished for them, the northern I’ve had have been from here, so maybe that’s the difference, our water gets pretty warm and I don’t walk on the ice to fish.

Probably,but all fish from warm water in my experience is unpalatable for the most part including perch and pickerel.
Thankfully we have some coldwater streams and lakes where the fish are good eating all summer.

Around here during the summer you get a few between 12 and 20 pounds that have the fat marbeled in the muscle and are just nasty no matter what you do . I've never caught a 30 + that had fat in the muscle . The fat is just on the surface and easy to trim . I'm not saying it's that way in Texas things are different down there

I agree with the corn meal and cajun seasoning. When I worked in PA , NY , WV, ND , I hated that flour or ,panco ,breaded stuff. It can sure ruin some good fish . I did find some edible beer batter fish .

Well I like fish. All this chatter about the best makes me laugh a little. I don't expect catfish to taste like walleye [ pickerel for those who lost the war] or trout to taste like Bluegill [brim for those who lost the other war]. I guess I'm all for diversity and inclusion when it comes to fish.
