I think the quality of the fish varies with water temp and quality, especially on the bigger fish.

The best meat of any kind fish deer or fowl is the belly steak from a flat head. NO BONES NO RED MEAT !!!!! 2-3 inches of pure tasty goodness !! Caught a 45 lber one night on a bass jig feed the whole family 4 times on the steak from the belly . Big as a hub cap and 4 inches thick Smells like popcorn popping when you cook it

Like I said,not familiar with catfish. I prefer pike under 6-8lb,bigger than that they are not near as good eating. Pickerel same thing 2-3 lbs are best eating fish.
Not to mention larger fish have higher levels of contaminants,which is not a big concern to me at my age but would be for children or women who may be with child or plan to. Even in the most pristine waters large pike pickerel etc accumulate natural mercury.

Looks good I’d say you’ve done that before, , I’d stick with the catfish I’ve never cared for northern pike they’re either slimy or full of bones, in my experience. Do you eat your pike raw,lol.Not as good as Pickerel,but some of the older people prefer Pike. I skin them and fillet boneless-pretty good eating out of cold water,I dont care for fish out of warm water. My favorite fish is smoked sturgeon-they have no bones. Never tried catfish except the brown bullheads..

Probably,but all fish from warm water in my experience is unpalatable for the most part including perch and pickerel. Thankfully we have some coldwater streams and lakes where the fish are good eating all summer.

Around here during the summer you get a few between 12 and 20 pounds that have the fat marbeled in the muscle and are just nasty no matter what you do . I've never caught a 30 + that had fat in the muscle . The fat is just on the surface and easy to trim . I'm not saying it's that way in Texas things are different down there ... same here Bigfoot... tried to tell Mr. Bruce that earlier... and he said a man can just trim a big blue out .. some people go to their graves old with a lot left to learn I guess lol
