Don know much about catfish, but I would assume those are much better for eating than the big huge ones you see posted.

Old wives tail…I can get a lot of fillets out of a couple 30# Appaloosa’s and no one has ever been able to tell a difference.

A rule of thumb my fishing buds and used to use checking set line we'd turn loose channel cats over10# and flathead over 15# . I think the quality of the fish varies with water temp and quality, especially on the bigger fish.

MAN turn lose a big flat head ??!!! ARE YOU CRAZY ? The best meat of any kind fish deer or fowl is the belly steak from a flat head. NO BONES NO RED MEAT !!!!! 2-3 inches of pure tasty goodness !! Caught a 45 lber one night on a bass jig feed the whole family 4 times on the steak from the belly . Big as a hub cap and 4 inches thick Smells like popcorn popping when you cook it

I'm with you . Can't cut the red meat out of those little fillets. Give me a big one I'll trim out that mud line and it's hog heaven !!!

Like I said, not familiar with catfish.
I prefer pike under 6-8lb,bigger than that they are not near as good eating.
Pickerel same thing 2-3 lbs are best eating fish.

Not to mention larger fish have higher levels of contaminants, which is not a big concern to me at my age but would be for children or women who may be with child or plan to.
Even in the most pristine waters large pike pickerel etc accumulate natural mercury.

Im over here trying to dye a truck load of tangled up rusty gov traps and your off goofing off again!

ALL catfish taste like mud, is what they eat off the bottom along with any other trash that's down there.

Get Bozo to send you some pike, lol.

Looks good I’d say you’ve done that before, grin, I’d stick with the catfish I’ve never cared for northern pike they’re either slimy or full of bones, in my experience.

Do you eat your pike raw, lol. Not as good as Pickerel, but some of the older people prefer Pike.
I skin them and fillet boneless-pretty good eating out of cold water,I dont care for fish out of warm water.
My favorite fish is smoked sturgeon-they have no bones.
Never tried catfish except the brown bullheads..

Around here they’re get as bad as bass for slime, if we go north we fish for walleye or perch.

The red flesh pike that feed on the freshwater shrimp are excellent eating.

After they’re cooked the meat has a slimy texture instead of a dryer flakey texture.

That hasn’t been my experience but like I said when I used to go north I never fished for them, the northern I’ve had have been from here, so maybe that’s the difference, our water gets pretty warm and I don’t walk on the ice to fish.

Probably, but all fish from warm water in my experience is unpalatable for the most part including perch and pickerel.
Thankfully we have some coldwater streams and lakes where the fish are good eating all summer.

Only way to mess up any freshwater fish is to fail to have the oil hot enough. It you ain't splattering oil everywhere, it ain't hot enough.

Around here during the summer you get a few between 12 and 20 pounds that have the fat marbeled in the muscle and are just nasty no matter what you do . I've never caught a 30 + that had fat in the muscle . The fat is just on the surface and easy to trim . I'm not saying it's that way in Texas things are different down there

I agree with the corn meal and cajun seasoning. When I worked in PA , NY , WV, ND , I hated that flour or ,panco ,breaded stuff. It can sure ruin some good fish . I did find some edible beer batter fish .

Well I like fish. All this chatter about the best makes me laugh a little. I don't expect catfish to taste like walleye [ pickerel for those who lost the war] or trout to taste like Bluegill [brim for those who lost the other war]. I guess I'm all for diversity and inclusion when it comes to fish. laugh
