On the farm whenever we butchered a beefer,,one of the first things we would make was "Lingua Y Aglio". Italian for Tongue and Garlic.Par boil it so you could skin it,,then fry in olive oil and garlic.Eat as is or serve over Rice or Ditalini Maccaroni.

Tongue is a fatty meat. When your living on a meat diet I bet that fatty tongue is wonderful. To live on meat you need fat or you get sick. Its why beavertail was also a preferred food. They craved fat.
