My preferred meat in Mexican dishes..
Most years the majority of my beef is tongue.
Otherwise most of my meat is wild game

On the farm whenever we butchered a beefer,,one of the first things we would make was "Lingua Y Aglio". Italian for Tongue and Garlic.Par boil it so you could skin it,,then fry in olive oil and garlic.Eat as is or serve over Rice or Ditalini Maccaroni.

In tacos or burritos from a good gut wagon aka food truck just good. Try the tripas tacos too

For street tacos, i order either Tongue or Cheek meat which I prefer. I haven't tried the Tripe in tacos, maybe another day.

Tongue is a fatty meat. When your living on a meat diet I bet that fatty tongue is wonderful. To live on meat you need fat or you get sick. Its why beavertail was also a preferred food. They craved fat.

My grandfather joked that the taste buds were on the tongue to keep it from sliding off the cracker!

i read the men on the louis & clark expedition would fight over beaver tail, its a soft sweet palatable fat like butter.

Pickled tongue and heart, many times in my youth.

You just haven't eaten until you sit down to a plate of pickled thistle and cow tongue casserole.
