See there's the problem with texicans. That is good enough to be called its own thing not BBQ. Everyone with a lick of sense knows BBQ is pork shoulder or ribs. Or if you're humoring a Carolinian maybe whole hog.
You can not BBQ beef, it just can't be done. But no, them texicans got to lay claim to something that ain't even their's in the first place.
Now honestly all that looks downright outstanding and worthy of standing on it's own rather than claiming to be something it ain't.

The good places to eat offer the brisket cut to your request. You can get dry cuts (lean), wet cuts (with some fat that tastes as good as pie alamode) and my personal favorite burnt ends (self explanatory and gives your mouth a concentration of those bad (This word is unacceptable on Trapperman) dry ribs in action).
When you are grazing on something that good you may hear this tune playing in yer head:

I just now finished the leftovers but still didn't need any sauce. I had it with bread and butter pickles, a big slice of onion, and some rather potent horseradish. Bout as good a leftovers as I can remember.

I don't think one can get any better than real Texas BBQ. Sure miss those little Mom/Pop places that fixed their home grown recipes.
As good as the Salt Lick is, their closest competitor Hays County BBQ used to cook and serve out of a double wide trailer but had about a 3 acre beer garden that was so nice you'd want to have your mail forwarded to it.
Now they have built about a $2.5M BBQ destination and you all but have to drive right past it to get to the Salt Lick. I hate to begrudge them their success but I sure did like that ol plain jane place me and my buddies would change out at.
