Congratulations on the first beaver. First of everything is always exciting. Now cut the meat off and put in the crock pot add onion celery potatoes, and carrot and cook on low. Add the veggies 3 hrs or so after you start it. If you do that make sure you use a different knife than you use to cut the castors out and don't get any castor on the meat. If I'm saving meat to eat from a beaver, I cut off the backstraps and larger hunks from the quarters as soon as I get the skin peeled back enough to and before touching the castors.

Congrats! My first beaver was in 1967 on the Chipp. R. In Eau Claire. I remember it like yesterday. I'm sure you will too.
