fo: There are tons of variations to this but what you see on top of the sockeye fillets is a 4 to 1 brown sugar to salt mix that becomes the brine when the fillets soak in it for 24-30 hours. We then clean then off and put them in our drying racks for a couple days before they go in the smoker. After that we pick the bones out and vacuum seal them. The rest you see goes directly to the freezer after the bone removal vacuum sealing. Thanks UB may have to give that a try,getting kinda board with making smoke/jar fish. I have salmon smoking today.I use 1lb dark brown sugar,1 lb salt and 1 oz pickeling spices. Dry rub put in fridge or cooler overnight and smoke with fine spruce sawdust. My family has used the same recipe for 100 years. Some question the use of spruce but its our favorite,less heat then hard woods.

Now, now, Most of Alaska consists of transplanted Lower 48 folks !! The vast majority of whome came from the North East USA !! Don't worry about me taking all of your VAST trapping territory ! I just need enough land to set 12 traps and I only trap for 2 weeks a year !!
