rainbows do not need to be scaled.

My favorite recipe is filet head on or off doesnt matter, stack then belly cavity up in a baking dish. season the cavity with salt pepper garlic and whatever seasonings you like, slice up some onions and garlic toss it in the belly, then fill with butter and bake it! Comes out awesome every time.

Second option is a seasoned flour and fry in a hot pan.
