Frozen Oakie:
Use a 4 to 1 Brown Sugar/Salt brine for 24-36 hours than dry till heavily glazed then hot smoke them. Usually dry for 1-2 days but this year with all the rain its taking longer. My bride at times uses variations of Yosida sauce etc in the brine. Lots of work. I call them flying fish because this time of year everyone becomes very friendly to us.

A couple years back my son took over the fish smoking responsibilities. The family could not badger me into it anymore. He smoked a batch; the next morning the smoker was up in smoke. For some reason, I wasn't mad at him. smile

I use the same brine for Atlantics except we add 1 oz pickeling spices for every 2 lbs of brine.

I'm not even sure that picture is allowed on a family oriented website.

YJ was it a net caught one or hunted? The guys here usually hunt them in late fall and do their best to take the tender grey ones. We usually only see white ones taken incidentally in nets.
