UgashikBob trapper Joined: Sep 2008 Posts: 528 Alaska Bristol Bay	Frozen Oakie: Use a 4 to 1 Brown Sugar/Salt brine for 24-36 hours than dry till heavily glazed then hot smoke them. Usually dry for 1-2 days but this year with all the rain its taking longer. My bride at times uses variations of Yosida sauce etc in the brine. Lots of work. I call them flying fish because this time of year everyone becomes very friendly to us.

We usually only see white ones taken incidentally in nets. We get out of life only as much as we really want and work hard enough to achieve
