Had some rabbit gumbo just last night. Mmmmm, was pretty good. Took some to work to a guy and he liked it pretty good too. He couldn't believe it was rabbit. I'm a fat southern boy so I like everything fried, but with my rabbit. I prefer to melt some butter and coat the individual pieces with the butter and then roll them in: cracker crumbs, bread crumbs, or crushed corn flakes. Either of these or any combination will do. Salt and pepper to taste. Place in a pan and dribble what butter is left over the top. Cook in the oven at 350 covered for about an hour. Then uncover to brown. It is done when you can lift a lef and the meat stays in the pan. You'll never fry em again. (even the old tough ones, come out this way).
