I ended up with quite a bit of extra Beaver meat because a local game feed didn't need any this year. Gave some away, cooked some up, and then decided to make Jerky out of the rest.

Beaver jerky is good stuff.

These days, even with castor prices, you maleore money eating the meat(assuming you save most of the edibles).

Made beav and broccoli stir fry last night out of backstrap... indeed, good stuff.

My sister made up some wolf and beaver stew....no joke....it was the rave.

When you cooked the wolf did the "green" disappear?

There was No green on it, used a couple pieces of backstrap. Would eat again
