John,
If you will be around, crawfish drop nets are what you want. They’re cheap, and they work well. Tie bait into the middle and set a line of them. Let them soak for a while, come down the line with a pole with a hook on the end scooping them up, dump, reset. Very popular here in places.
Traps are for if you’re going to leave them unattended overnight imo. IF the water isn’t deeper than the PVC
and people stealing them won’t be a problem then PYRAMID traps are what I’d use. If the water is deeper or you want to fly under the radar, 30” pillows are what I’d go with.

Just so you know, there’s something California freaks about, it says so in the description. Not sure if that means you can’t get them or not. Good luck!
My bait choice is the same fish you trap with—shad, carp, menhaden, etc. I don’t waste my time using bass, crappie, or bream. However, I have had excellent results using catfish at times. This doesn’t mean there aren’t other baits that work well. I know that chicken and slab bacon work too.
