A generator is another thing I'd add to the mix just because this is Montana and power outages are rare but still possible solar panels and a few batteries could be added also in time.
There ya go a little something to think about in your spare time ha ha

lol - it's the little things smile ... I mention it as I didn't enclose an area specifically for drying - I am able to keep enough air circulating that I didn't have an issue the last 2 seasons, but I do miss my smaller space and a dehumidifier, I do think it helps a LOT.

I have a fetish with Stainless Steel- if you can find a restaurant resale shop or local auction site, I highly recommend picking up a sink and counter, it seems like a restaurant goes out of business everyday. We use it for fish cleaning, trapping and game processing and different knives/boards for each. I also saw autopsy stainless tables for sale cheap- but wouldn’t want to clean the trap and drain on those.

I bought a brand new surplus stainless steel 3 tub bar sink with 2 counter tops for $3. I built a cabinet base and installed it. Works very well.
