Having lived in Nome and Unalakleet, I've eaten a fair amount of seal. Most has been dried and then stored in seal oil. Generally dried meat is called black meat. I have a jar of oil and black meat in our fridge now. I like to put seasoning salt in the oil and then dip food, including the black meat, in the oil.
One thing I learned a long time ago is that native food, like seal meat, is best when eaten with other natives, maybe a few non natives too!! My ex, from Emmonak, would invite others over and we would have a big table of native food. The seal oil was central to the meal and most of the food on the table was dipped in the oil. Many veggies are good in oil. Cauliflower, cabbage, celery, onion, turnips, boiled potatoes (still love those in oil). Usually we had different meats as well. Frozen sheefish was a staple (frozen raw). Both cooked and raw frozen moose or bou. Dried salmon, smoked salmon strips. plenty of other stuff I can't remember. I've also had frozen green sheefish and white fish. The meat is allowed to taint slightly then frozen. it is a different taste than fresh frozen. I can enjoy a few bites of it, but not more than that. Have also eaten walrus but have never found it enjoyable.
