Wife roasted one of our chickens last night for dinner. With the left overs I believe she is going to make stir fry with some fried rice.

Our big supper was a delicious beaver roast last night so I suppose today will be some leftovers of that. I seared it in a pan with some bacon grease after having rubbed it down with spices the night before. After it was browned I placed it in the crockpot for the next 5 hours. Fell off the bone like a fine roast beef. That was actually my first time eating beaver but it won't be our last. I'm thinking of chunking some pieces for canning next time I catch a couple.

Went to a wild game dinner today. Had 8 different types on venison, Rabbit Pot Pie,Sheepsheads mushrooms done 3 ways, 3 different types of elk along with Walleyed chowder,Salmon Bisque and Chile. One of the best things I saw was the lady loved the Elk Oysters. She didn't have a clue what they were. She didn't like them after she was told what they were.

That sounds pretty cool. I enjoy trying new wild game dishes
