I've read where some folks in Alaska eat beaver tails that are roasted over hot coals. After watching an episode of "the last Alaskans" I seen where they wrapped up a beaver tail in aluminum foil, roasted itand ate it. With spring beaver season around the corner I might give it a try. Have any of you tried it? Is it good?

Another way to eat it is to skin the tail (for it's leather) then take thin bacon-like slices of the fat/flesh or whatever you want to call it, and then fry it like bacon until somewhat crisp. It's interesting and not at all bad, especially if you add some spices and salt.

From the way it was put to me is like this; You eat a rabbit and other lean meat for a few weeks and you begin to crave fat. So eatting beaver tail at that stage is like eatting candy.
Common sense is a not a vegetable that does well in everyone's garden.

Is that what they call a beaver saddle and not really the tail? Eating a tail has to be similar to eating a greasy piece of tire~ LOL

My best friend, who grew up in rendezvous camps every summer, says its like eating a hot lard popsicle. I gotta stop reading stuff on here while i'm drinking! Spewed water all over the floor when i read this!

The soldiers in the Lewis and Clark Expedition burned 9000 calories per day. There were not many high-fat foods available to them, except beaver tails. Was one of the favorite meals. Imagine the volume of food they consumed when available. Were people really keeping track of their calories back in those days?

saw some guys cook one on you tube... grilled until the skin puffed up, then took it off... they put it back on the grill for a bit... looked more like pure fat than meat

Pure fat.

A friend of mine who is a wild game gourmet cook and has even marketed a couple different wild game rubs and barbecue sauces asked me for a couple beaver tails so he could make some beaver tail soup. He gave me some to try. It was greasy, had a strong taste with a slight castor odor. He asked me how I liked it? I said, I didn't. He said, he didn't either and tossed it.
