Ft Niobrara Refuge has an annual buffalo auction. Not sure if it's spring or fall. I was told most of them go to the native americans.

On a broad side buffalo find the ear go 2" back then 2" down pull the trigger so you can find out if you really know how to sharpen a knife. This takes out the orbital they drop like a rock then the work begins.

Saw a Meateater show recently where Rinella went to Mexico for a free range buffalo hunt. The hunt pretty much consisted of finding the buffalo, then waiting for the cooler temps of late afternoon/evening before taking the shot. Even with the small cow he shot the meat handing was quite a chore.

I drew and participated in the Custer Buffalo “hunt” in 2017. They raised the permit fee to $3200+ so it is a bit steep, but from what I gather the market is driving the price. I know even locally the game preserves that I know the price has doubled and even tripled over the past 5-7 years.

Excellent table fare.

The reservations in SoDak have buffalo. Some wandered off the rez into NE and they just shot them and left them lay rather than try to return them or salvage them. So I heard.

Heritage meats in leoti kansas sells buffalo meat. I always buy a boneless ribeye roll when I pick up the pigs we take there to be processed.

West of campo Colorado there is a guy that has buffalo, I think his name is 'dude' ratlaff. the guy who owns the gun shop in springfield will have his contact info I hear you can pay him way too much and shoot one. Closest packing house to there would be in dalhart Tx. There are also buffalo around the windmills between lamar and springfield, dunno who owns em.
