We go to a couple real good sushi bar while in Buffalo New York. Had a spicy salmon the was more like a paste in rice.

I cheat with the wasabi and buy it in a tube ... then again, i don't grow my own rice either. The trick is the fish has to be really fresh and sliced very thin across the grain / fibers. in the light there should be a rainbow shimmer on the flesh if done right. To do that is relatively easy with the right tools. you never cease to amaze me, Michael! Cheers!

Here in Rochester we have a couple sushi all you can eat (lunch) places...$16..spicy tuna and salmon are my favorites. I also make my own.

There is one advantage to living near NYC... Good Stuff.... My usual order...Salmon Skin Roll, fried calamari, eel, clam, mackerel, sesame tuna, shrimps, crab and egg custard... ,.,. I like your food pics, River Birch.

Had some sushi over the Turkey Day Holiday! Salmon roll, tuna roll, California roll and some others that I can’t remember or can’t pronounce, lol.

St. Cloud has a good sushi bar? I just may have to check that out one day soon. This mid-west may first tried it about 30 years ago while visiting friends in Seattle. I tried alot but in the end liked the eel, calamari and the yellow tuna. Now my mouth is watering......
