Caught a small beaver today, and the kids decided they wanted to try to eat the tail. We cooked it in the oven at 350 for about 1/2 an hour and all gave it a try. It was.....not as bad as I thought. Not much flavor, very sticky, all fatty gelatinous mess. My oldest girl loved it though. She dug it out of the skin and ate it whole, like a chicken drumstick. She's my best trapping buddy, and loves the "guts" too of every beaver-hearts liver and kidneys. She's a brave girl. LOL !! I love it !! After getting the skin off the tail chunk it up in a pot of beans with some liquid smoke !! She'll be hooked for life !! FYI. I wrap mine in foil and put it off to the side INSIDE the wood stove.....low fire. Take it out 30-60 minutes later and peel the skin

When I ate beaver tail I skin them and then cut up and put in the pan to fried up. I do not do with the skin on .

it sounds like it would make a better soup base than eating outright , something like a bean soup.
seasoning it so that you could make it taste like what you want.
sort of a ham hock replacement they are also very fatty and provide little flavor
America only has one issue, we have a Responsibility crisis and everything else stems from it.

Cool. Basically it's bacon with just the fat, right? Kinda sorta. It's vaguely pork-fat flavored, but smells kinda sorta like fish when cooking which was a little off putting but there was no fishy taste at all.
