I've built three strippers over the years. I'm assuming you're talking a cedar-strip canoe?
If so, tite-bond works well. Don't go with the epoxy. In reality, the strips are just for looks and to get the right form and lines. It will need to be glassed, which gives it the strength and water-tightness. If done correctly, doesn't add much weight. I think my last 16-footer weighed about 47 pounds total. There's a book, "Building a Strip Canoe" by Gil Gilpatrick that you need to get. Definitely worth the cost if you're serious about the build. They are a beautiful piece of useful art.
THE STRIPPER
There's magic in her curves and line My loving hands caress The simple form, the flow so fine She always will impress Those who gaze in awe-struck lust At her perfect form. They see her glide and they will trust Her grace in any storm. Her quietness is like a crime Her willingness to do Most anything, most any time My cedar strip canoe.

Sounds like a great project. I've built a couple strippers and a rebuilt a couple wood canvas (kept one of them). Used titebond for glueing the strips. The strippers are about as light as you can get for a rigid hulled canoe.
Have you picked out a model/design that you're going to build? I have not, but was looking at a bobs special from Noah’s marine. Also open to suggestions

Also open to suggestions If it's anything like the original Bob's special, it would be a great boat for fishing and trapping in sheltered water. Flat wide bottom for good primary stability, good carrying capacity and low sheerline so the wind won't push you around so much. That's a Chestnut design, like pretty much every good working canoe design out there. Mine is a 16' prospector, another Chestnut. Much more rocker than the Bob's, deeper and round bottom. Great for tripping and big water, but not nearly as well suited for poking around hunting fishing and trapping.

I've built one cedar strip with my cousin that we raced in the amateur class. 18 feet long and 52 pounds. 10 oz. glass on the outside and 4 ounce on the inside. Fairly easy to build.
