Once the water came to a rolling boil....the day old farm fresh eggs were put into the strainer (Above the boiling water) then covered and Steamed for 20 minutes. And when that 20 minutes was up....the eggs were put into a cold bowl of water for 15 minutes.

Very nice , Nessmuck. Going to share that with my neighbor, I mean fresh egg supplier , I mean good neighbor....lol
His adult daughter for years has hated the fact every time she wanted hard boiled eggs for making deviled eggs or colored ones for Easter , she had to buy them at the store even though there was a huge supply at home.
Good science/cooking experiment. Kudos.

Just STEAMED another batch of eggs....Holy Moly ...they peel themselves. The century old mistery has been UN- LOCKED !!!!!!!!!

Steaming is the only way to go for fresh eggs. I use one of these--- https://www.homedepot.com/pep/Cuisi...bQ-hEAQYBCABEgLlc_D_BwE&gclsrc=aw.dsIt comes with a measuring cup for the water. You can steam anything from soft boiled eggs (my favorite) to hard boiled. Drop them in cool tap water and they'll shell really easy. The amount of water you put in works as the timer. The unit beeps when the all of the water is steamed off. Fool proof and perfectly cooked every time!

And one step off in another direction: For excellent smoked eggs - steam up to a dozen eggs for 11-12 minutes
- set in ice water for 10-15 minutes. Time not critical, but cool eggs completely, but don't wait until the water to come back up to room temp.
- peel. (Shells drop off like a prom dress).
- cold smoke for about 1 hour
They can be smoked at a little higher temp. Maybe 150-200 F° but only for about 20 min, or they become rubbery. For more than a dozen eggs you need to increase the steaming time. By how much? I don't know exactly, but, I have had under cooked eggs the few times I have tried to exceed a dozen per batch.
