When I was working up north knoephla was a staple, I love that stuff. Nothing better after a day of working outside at -30

i Learned what knoephia soup was when I moved and started working in SD, area I’m in has a very strong German culture. Lots of really good food though most of it isn’t very healthy.

Quote
Traditional knoephla soup is a thick chicken and potato soup, almost to the point of being a stew. It is particularly common in the U.S. states of Minnesota, South Dakota, and North Dakota, where there was significant settlement of German emigrants from the Russian Empire. There are different iterations known throughout, though the North Dakotan iteration typically contains just potatoes, dumplings, and chicken.

That stuff is awesome. Never had a better soup. Best I found wss in a small cafe in new England nd after a cold day of pheasant hunting on the side of a pounder cheeseburger for $4. Makes me want to drive up there right now and buy a gallon or two.
