What is the purpous of the little triangular spike that's on the chain ring of some traps, particularly older footholds.

That's a tree spike. Used to anchor a trap to wood like you might do on a log crossing set.

Yep - and good luck getting it out , after you pound it in a tree ...
Did that once when I was a kid , ruined the chain getting it out ..

Lots of coon trappers would spike off to chunks of log for an improvised drag.
