Out of 5 beaver in the last week, 2 of them had spots like this where bile from the gallbladder has stained the meat, along with the intestines. The fall bladder wasn't popped, but somehow bile had leaked out. It's kinda disappointing, because I'd love to keep the meat, but I don't take chances with meat, especially with free meat. On those beavers, I just took the backstraps and back leg meat.
What causes this? I'm curious to know if it has something to do with how they were dispatched. Both these beaver were alive when I got to them, and had to be dispatched.

I’m not saying you’re wrong but what leads you to believe that is a deposit of bile? I thought bile was made in the liver. I can’t say I’ve seen a yellow spot like that. But 99% of my beaver are DOA.

That looks more like adema to me than bile from a gall bladder. A bite or even a hard pinch between those buck teeth could easily cause that. If in doubt, make dog food out of it. My dogs love it, and they eat their kibble better when, I mix in some cooked beaver and rice!

PS, I've seen 330's cause that before too!

I guess I'm just assuming, but on both beavers the spot was located directly over the gallbladder.
