Deer liver is a good one for me.

we were given a rotten deer hide and we have a heart and liver in the freezer?

It's not really bait unless they eat it but I use my cats turds at coyote sets with good success. Down a dirt hole or on one side of a walk through with coyote poop on the other side of the trap.

Road kill deer, moose, whatevers prevalent in your area.

What doesn’t a coyote eat would probably be easier to answer than what they do eat, lol.

Roadrunners, especially if you're using dead falls or dynamite.

If your looking for a professional made bait. Seven oaks beaver bites is a good one.
Or dobbins bait solution is also a good make your own bait choice.
I've used both with good success.

A lot of stuff will catches some coyotes. It takes a lot of trapping and/or testing to determine what is best. I like horse for a red meat base. Deer and a good fish base shouldn't over looked. If your new to trapping its worth your time to look at the "lures; when and where" thread over on the chat forum. A ton of information on coyotes from some people that understand coyotes.

I suggest getting a few good books, FYI setting on coyote tracks is "on sign" I've learned all or most "haven't tried them all" commercial baits will catch coyotes, the questions, I ask my self now is has a long liner taken the "cream" population off this area already with one of them baits? Maybe the neighbor kid bought that highly recommended bait and poorly set or prepared traps has that population thinking a certain smell is trouble, I find a large selection of different bait/lures with good notes on what and where I use it has really helped me more than any certain bait or lure did
