Here is a forecast for next week. It gives wind for each day here morning/midday/night.

Does it matter for DHs?

Does it matter if the wind is blowing in the hole vs over the hole?

I prefer them to have to cross the pan in order to get to the smell that attracted them in the first place. I make deep step down dirtholes, two at every location. But, as you can see from your forecast, the wind can and usually does a lot of different things. I always smirk at the deer hunters who say play the wind because when I deer hunt the wind always blows in at least 3 different directions within a 3 hour hunt, 90 percent of the time. So, I like two sets "facing" each other to account for all the wind variations you'll likely encounter.

Can’t speak to other critters but I have videos of foxes and it seems they circle the set anyway. Once they get there wouldn’t the visual have them work the set the way it is made regardless of the wind?

I suppose it matters more on a scent post.

I think the wind gets their attention if it’s blowing away from them it reduces the chance of them picking it up that’s why I set both sides of the trails.

Yes, use the wind to get them to the set, after that the set construction should take over. I have some videos as well and when they commit it makes me feel silly that I fretted over every little pebble and it being in the perfect spot and making small ridges all around the pan to make them step where I want them to. When they work it, they step everywhere, making bedding probably the most important factor in set construction, all things being equal.

On a flat set or dirt hole I put a shot of urine on the down wind side of the walk through style set, I started doing this for wind now I feel it helps keep them near the X longer, after checking out the bait/lure or hole at the set whether to dig or mark it, if they smell the urine it can cause them to shuffle there feet if they wanna mark it also...

Wind is critical.

Wind and ground thermals that drift over the ground cover is dominate in helping animals to locate your sets/scent trail. Whether it is understood by some there is a micro particle trail left on the ground cover like grasses etc.. At first this scent trail is quite strong then as the scent intensity wanes the trace odor fades accordingly. Direct deposited scent trails will last much longer depending upon several ground and weather condition criteria.

You mentioned ground thermals, can you describe this condition and the causes for it?

Cold air sinks, warm air rises. Thermals will push warming air uphill in the morning and throughout the day and they will pull air downhill as the air cools in the evening and night.

Just up and down if there are no hills where you live.

Would the ground in an open field getting sunshine all day cause the air passing over it to rise?

Some of this sounds like bow hunting thinking.
